Let me start off by saying that I love muffins. I love trying all different types and I love that they are so quick and easy to make. So when I bought one of my favorite cookbooks called The Joy of Vegan Baking by Colleen Patrick-Goudreau and I saw the cool muffins recipes it was safe to say that I would be trying every single one of them.
So this morning I tried page 38 Banana Chocolate Chip Muffins:
Now since I was making them for breakfast I did not add the chocolate chips. I also did not have any walnuts so I left those out and I only used 1/2 cup of sugar instead of the 1 cup that the recipe says.
These were so good and soft, I will definitely be making these on a regular basis.
