Google Tofu scramble and you can find many great recipes on how to make this wonderful breakfast meal. My recipe comes from the Book Vegan with a Vengeance by Isa Chandra Moskowitz. YUMMY!! This is a morning staple at least a couple of times a week in my home. Pair it with muffins, toast, hash browns, or pancakes and you will have a breakfast fit for a King (or better yet a VEGAN!!)
*Update: a much easier recipe is to just drain 1 lbs of extra firm tofu and then mash it with a fork. Cook it over a bit of oil for a couple of minutes until it is warm. Then add whatever you would add if you were making scramble eggs (chopped onions, garlic, green peppers, tomatoes,etc) add some spices (tumeric, sea salt, pepper, etc) and of course add nutritional yeast! Continue to cook for about 5 mins then eat up!
